Vinification

Hand selection, destemming and crushing; alcoholic fermentation in steel and concrete vats with selected yeasts and frequent daily pump-overs.

Aging

36 maanden in Franse en Slavonische eiken vaten van 5–20 hl, daarna 4–6 maanden decantatie in staal en vervolgens flesrijping.
