Vinification
Een deel van de druiven wordt gekoeld tot circa 18 °C voor 3–4 dagen koude premaceratie. Daarna wordt de temperatuur verhoogd tot 27–28 °C en gaat de maceratie nog circa 12 dagen door.
Aging
Malolactische omzetting in barrique, gevolgd door circa 2 maanden rijping in barrique en verdere flesverfijning.
