3–4 weken vinificatie in Franse eiken kuipen van 100 hl, met temperatuurcontrole gedurende de alcoholische vergisting.
Aging
Minimaal 18 maanden in vaten en grote Franse eiken recipiënten, gevolgd door minimaal 4 maanden flesrijping in de kelder.

Historisch familiebedrijf uit Montefalco, opgericht in 1884 en sinds 1954 in handen van de familie Pambuffetti. Scacciadiavoli beheert 40 hectare wijngaard binnen een landgoed van 130 hectare en combineert klassieke Sagrantino met Trebbiano Spoletino, Grechetto en innovatieve metodo classico-wijnen.
